This dish is made of grated carrot. Carrots are a rich source of beta carotene and vit A giving good vision. it is also having antioxidant properties preventing age related degenerative conditions. It helps us give a nice glowing skin.
Since this is a dessert with sugar in it, its better to be avoided by diabetic people or use less sugar or any sugar replacement for diabetic.
Ingredients
- 2 tbspn ghee
- 1/4 - 1/2 cup cashew nut +raisins + almonds + pistachios
- 2 cups grated carrot
- 1 cup milk
- few saffron strands
- 3 tbspn cream (optional)
- 1/4th cup-1/2 cup (as pr your taste) sugar
- 4-5 crushed cardamon seeds
- In a pan add Ghee and roast dried fruits for 1-2 min.
- Now add carrot and mix for around 3-5 min
- add milk and saffron, allow to cook and keep stirring till the milk evapourates
- now add cream and boil for another 3 min
- once dry add sugar and cook for another 5 min with continuously stirring
- once fully dry add cardamon seeds for nice smell and flavor
- serve hot
